Advantage with egg laying birds is that we can transport only frozen embryos, and hatch them after arrival, that would save space on Space Ship. Chickens have most advantages, but I think they need bugs as food (or probably fishmeal), so how about ducks, or something similar?

Chickens have the greatest knowledge base on how to care for them, as opposed to ducks, so perhaps chickens would be a better beginning.
Although I have not had duck in so long I do not recall the texture differences in the meat.
Do we know what the oxygen requirements for the different forms of fowl are?
